Beef Nihari Paya 2kg (Hokkaido)

Beef Nihari Paya (Hokkaido) is a 2kg pack of halal beef trotters for making nihari paya. In this slow-cooked dish the feet are simmered for hours, often overnight, into a spiced gravy that sets thick as it cools, and it is usually eaten with naan.

How to use

• Wash and blanch the pieces, then brown them with onion, ginger-garlic paste and a nihari or paya spice mix.
• Cover with plenty of water and cook on the lowest heat until the tendons are soft and the meat comes away from the bone.
• Near the end, thicken the gravy with a little wheat flour mixed in water, the usual nihari method.
• Delivered chilled; store as directed on the pack.
