How to use

• Soak briefly in cold water, then drain well before cooking.
• Cook slowly with sliced onion, garlic, cumin and red chilli, adding hot water a little at a time, for a Bengali-style beef curry.
• Simmer the bonier pieces for several hours with onion and whole spices for yakhni, a clear beef broth.
• Delivered chilled; store as directed on the pack.
