JB Dry Fish (Keski)

JB Dry Fish (Keski) is a 200g pack of halal dried keski, the tiny river fish also spelled kachki or kaski. Dried as shutki, the little fish shrink to thin slivers with a strong, savoury smell and go into the pan whole.

How to use

• Rinse quickly in a sieve and let it drain.
• Dry-roast in a pan, then crush with raw onion, green chilli and mustard oil for kachki shutki bhorta.
• Cook with thin potato slices, garlic and tomato until almost dry.
• Keep the pack sealed after opening and store as directed on it.
