JB Dry Fish (Lotiya)

JB Dry Fish (Lotiya) is a 200g pack of halal dried loitta, the fish known in English as Bombay duck. Loitta is a soft-bodied lizardfish, and once dried as shutki it becomes firm and pungent, softening again when cooked in a spicy sauce.

How to use

• Cut into short pieces and soak in warm water for a few minutes, then rinse.
• Cook as loitta shutki bhuna with plenty of onion, garlic, tomato and chilli.
• Dry-roast or fry the pieces, then mash with onion, chilli and mustard oil for bhorta.
• Store as directed on the pack.
