Hilsha Whole (1000-1200g)

Hilsha Whole is one whole halal hilsa fish in the 1000–1200g range, so the exact weight varies from fish to fish. Hilsa, called ilish in Bengali, is a member of the herring family and the national fish of Bangladesh, with oily flesh and many fine bones.

How to use

• If needed, scale and clean the fish, then cut it into steaks, keeping the head and tail for dal or a vegetable dish.
• Cook the steaks in a mustard sauce as shorshe ilish, or steam them as ilish bhapa.
• Fry the pieces with turmeric and salt for ilish bhaja; the oil left in the pan is often eaten with hot rice.
• Delivered chilled; store as directed on the pack.
