Mix Bhutan (Khasiko Bhutan) is a 1kg pack of halal mixed mutton offal for making bhutan. In Nepal, where the dish comes from, khasiko bhutan is goat tripe and other digestive parts, often with liver and kidney, stir-fried with onion, tomato, garlic and spices.

How to use

• Wash the offal in several changes of cold water and trim away any fat or membrane.
• Boil or pressure-cook with salt and turmeric until tender, then drain and cut into small pieces.
• Stir-fry with shallots, tomato, garlic, chilli and cumin until dry and well coated for bhutan.
• Delivered chilled; store as directed on the pack.
