Padda Dried Anchovy 200g

Padma Dried Anchovy is a 200g pack of halal dried anchovies, tiny whole fish preserved by drying. In Bangladesh dried fish is called shutki, and these small ones need no cutting: a short soak and they are ready for the pan.

How to use

• Soak for five to ten minutes, rinse away any sand and squeeze dry.
• Stir-fry with plenty of onion, garlic and green chilli until crisp at the edges.
• Mash the fried fish with mustard oil and chilli for a quick shutki bhorta.
• Reseal the pack after opening and store as directed on the pack.
