Ambika Maida is refined wheat flour, the Indian name for all-purpose flour, in a 1 kg pack. Ambika describes it as finely milled and the same kind of white flour that is sold as komugiko in Japan.

How to use

• Make naan and bhatura, or roll it thin for samosa wrappers.
• Use it for Bengali luchi and for fried snacks such as namkeen.
• It also works for gyoza wrappers, udon, bread and cakes.
