Aloo Bakhara 100g

Aloo Bakhara is dried plum with a sweet and sour taste, in a 100 g pack. Also spelled aloo bukhara or alu bokhara, it is added to rich rice and meat dishes, and in Bangladesh it is a familiar part of kacchi biryani and the sweet chutney served at weddings and Eid.

How to use

• Tuck a few into the layers of biryani, pulao or korma for a gentle sour note.
• Simmer with sugar, a little water and dried chilli for aloo bokhara chutney.
• Soak in warm water first if you want them softer before cooking.
