Padma Mas Dal (Black gram)1kg

Padma Mas Dal is black gram (urad) with the dark skin removed, leaving small creamy-white lentils, in a 1 kg pack. Padma lists Myanmar as the origin. Cooked, it turns soft and slightly sticky, so it is ground into batters as well as cooked as dal.

How to use

• Soak, then grind with soaked rice to make idli and dosa batter.
• Grind to a thick paste with spices and deep-fry as vada.
• Simmer with ginger, garlic and spices for a creamy dal.
• Fry a teaspoon in oil with mustard seeds as a tempering.
