Radhuni Roast Masala 35g

Radhuni Roast Masala is a one-packet spice mix for Bengali chicken roast, the sweet and savoury wedding-style dish, in a 35 g packet. The maker, Square Food & Beverage Ltd in Bangladesh, says no other spices are needed. Its spices include onion, garlic, ginger, chilli, cardamom, cinnamon, nutmeg and mace, and salt is already in the mix.

How to use

• The maker's recipe serves 8: one packet, 1 kg chicken, 150 ml oil, half a cup each of sour yoghurt and chopped onion.
• Fry the chicken and onion until light brown, then add the yoghurt, masala, a little sugar and half a cup of water.
• Cook until the gravy is thick, and finish with fried onions. No extra salt is needed.
