Radhuni Rezala Masala 32g

Radhuni Rezala Masala is a spice mix for rezala, the pale, yoghurt-based Mughlai curry served at Bangladeshi weddings, in a 32 g packet. Radhuni is a brand of Square Food & Beverage Ltd in Bangladesh. Rezala is usually made with mutton, beef or chicken, and gets its mild, tangy taste from yoghurt, ghee and whole spices rather than turmeric or much chilli.

How to use

• Follow the packet for how much meat one packet seasons.
• Cook the meat slowly in ghee with onion, yoghurt and the masala until tender and the gravy turns creamy.
• Drop in a few whole green chillies near the end for gentle heat.
• A splash of milk or a spoon of poppy seed or cashew paste makes the gravy thicker and paler.
